A few days ago I decided to buy tofu, I haven’t eaten it in a long time so I was like: “Hey, tofu! Let’s have some fun!”. One of the things I like to do with tofu is to transform it into something special while keeping the healthy nutrients. This time I decided to turn it into a pudding. Let me first give you more information about Mr.Tofu. It is a popular food made from soybeans. It is also an excellent source of amino acids, iron, calcium and it’s high in protein(yay!). Trust me, it provides many health benefits.
One thing that makes tofu interesting is that it is able to absorb new flavors through spices, so you can play with this product as much as you want. That’s why my game today was tofu pudding. When you see it, you may think that this creamy, rich, chocolate-like pudding is full with calories, and can be your next sin? Well, you are wrong, this is actually quite good for you. It has received the award of being the perfect vegan dessert! The best part is that it is super easy, no cooking required, just blend and smash it!
Once you have a sudden urge for something sweet, grab this delicious pudding. At least you wont feel guilty after putting it in your tummy.
The key for this recipe is the raw cocoa, and it is very important. It will make this pudding both healthy and delicious. I also added one scoop of vanilla whey isolate, because as you know, the more protein, the better.Only three main ingredients will make you a dessert which will not even taste of the tofu that’s blended inside!
- 1 cup of mashed up, fresh tofu
- 3 Tbs agave syrup, or sweetener of your choice
- 2 Tbs. cocoa powder (optional)
- 1 scoop vanilla whey isolate
Place the tofu, sweetener, whey isolate and cocoa in a blender and blend until totally smooth.
Serve cooled with optional extra agave syrup on top(as desired). The one in the photo is flavored with agave syrup and coconut flakes on top.
