Strawberry Coconut Bites!

Say hello to my heavenly strawberry coconut bites.  I mean, don’t these pink babies look like your perfect on-the-go snack? There’s a reason I call them ‘heavenly!’ They are so easy to make and are sure to be one of your favorite snacks whenever you feel the need of satisfying your sweet cravings.

These energy balls are naturally sweetened by the strawberries and contain no refined sugar. If you need a bit of sweetness, a little honey or agave syrup should do the trick. Just few of these will make you feel full. Even if you eat all of them, don’t judge yourself. I call them guilt-free balls, because they are safe to eat as they do not contain a lot of carbs.

How to make Strawberry Coconut Bites:

  • 1 Cup coconut flour
  • 2 Tbsp sunflower seeds
  • 1 Cup coconut flour
  • 1 Tbsp Rice Coconut Milk
  • 2 Tbsp Coconut oil
  • Shredded coconut
  1. Place all your ingredients in a food processor/blender and pulse until a smooth dough forms.
  2. Your dough should be soft enough to mold with your hands (If it seems too dry, add a little more coconut milk and coconut oil. If it seems too wet, add more coconut flour.)
  3. Using your hands, roll into small balls, then roll into the shredded coconut
  4. Refrigerate for 2/3 hours.
