Kiwi Raspberry Layered Chia Pudding !

I’m a big lover of chia pudding, but sometimes, a plain chia pudding just doesn’t excite me enough.

I love smoothies, and most days that is my number one breakfast, but sometimes I want to switch and make chia pudding instead. But recently, one of my new favourite breakfast meals, is combining the chia pudding in layers with a smoothie.

My gorgeous layered Kiwi and Raspberry Chia Pudding is naturally sweet and creamy. I usually make it ahead and keep it in the fridge for a quick and healthy breakfast or snack anytime.

I love the combination of Kiwi and Raspberry.  I mean is there any better color combo than pink and green? Maybe to you this looks like something that requires a lot of time, but it’s very simple and easy to make.

The pink and green layers are basically thick smoothies and the bottom layer is just chia seeds and almond milk. Chia seeds are superfood bombs. They are full of omega 3 fatty acids, protein and calcium. Plus they make you feel full !

The chia pudding part firms up in the fridge after a few hours or you can leave it overnight.  It’s great the next day for a morning pick me up.

The simplest way to make it is mixing 2 tablespoons of chia seeds with 1/2 cup of milk of choice. That’s ALL you need. I love the combination of flavours and textures you get as you dig your spoon into each layer. I definitely enjoyed this breakfast with my eyes as much as I did with my taste buds. Plus these are perfect for entertaining or for a special occasion, because they just look so pretty! It’s all in the pudding folks!

This can be the kind of breakfast you wish you made more of after you finished it. Chia pudding soaked with almond milk, raspberries and kiwi smoothie.

Ingredients

Chia pudding layer:

  • 2tbsp chia seeds
  • 1/2 cup almond milk
  • Pink Layer:
  • 1 cup frozen raspberries
  • 1/4 cup coconut milk
  • Green Layer:
  • 2 kiwis
  • 1/4 cup coconut milk

Instructions

  1. First, stir together the chia seeds and  1/2 cup milk.
  2. Place in fridge for at least two hours to set.
  3. Place the chia pudding layer in the bottom of the glass.
  4. For pink layer, mix the ingredients in a blender. You want the mixture to be thick.
  5. Pour the pink layer over top of chia layer.
  6. For green layer, mix the ingredients in a blender.
  7. Pour green layer on top of the pink layer.
  8. Top with raspberries or any fruit you like.
  9. If you want it more sweet add honey in one of the layers.
  10. Enjoy !
