Mango Chia Pudding

This Mango chia pudding with strawberry smoothie will make you feel like summer is right baround the corner. I can enjoy this every day as a healthy breakfast or snack!

I know it’s difficult to imagine yourself eating this tropical mango chia pudding while being cozy, wrapped up in a blanket on a rainy day. But trust me, once you taste this, it will take you to any tropical island you dream about.

This mango chia pudding with strawberry smoothie is one of my favorite. With spring coming up, I realized it’s the right moment to share my recipe with you guys.

This time I decided to  make a recipe featuring Vital Proteins collagen peptides. I was so excited about making an easy and simple, yet very healthy recipe, since I already use the same collagen in my morning smoothies!

INGREDIENTS

CHIA LAYER

  • 3 tbsp chia seeds
  • 1 tbsp unsweetened shredded coconut
  • 2 scoops Vital Proteins Collagen Peptides
  • 1 cup almond milk (or coconut milk)
  • 1 tbsp honey (optional)
  • 2 tbsp pure mango puree

STRAWBERRY SMOOTHIE LAYER

  • 5 strawberries
  • 1-4 tbsp of water (as needed)
