Matcha Collagen Pancakes

What happens when matcha meets pancake ?

Well, then you will definitely have a happy Sunday morning.

I am a huge matcha lover, there is no day going by that I don’t drink my afternoon matcha latte, plus those coffee places that already have matcha things on the menu are my favorite ones.img_5485.jpg

Sunday mornings are known as sweet mornings. That’s why this Sunday I decided to step up my game with my fancy matcha collagen pancakes. Two of my favorite things in a pancake, matcha plus collagen. I can assure you that they are game changing. You can top them with honey, nuts, fruits, coconut yogurt, dark chocolate….The most interesting part is that you can have fun with it – choose whatever toppings you like till you find what’s the best for you!IMG_5497

These little mountain of pancakes is so good, believe me it will make you feel like you’re eating a creamy matcha cake for breakfast.

Ingredients

  • 1 egg
  • 1/2 cup milk (almond milk)
  • 2 tbsp coconut butter
  • 2 tbsp coconut sugar
  • 1/2 tsp vanilla extract
  • 1 cup gluten free oat flour
  • 2 tsps Vital Protein matcha collagen powder
  • 1 1/2 tsp cornstarch
  • 1/2 tsp vanilla extract
  1. In a large bowl, whisk together the egg, milk, melted butter, oil, sugar, and vanilla extract. Add the flour, matcha powder and cornstarch and whisk just until the batter comes together.
  2. Heat up a nonstick pan on a medium-low heat. Brush with coconut butter.
  3. Pour mixture in a dollop circle of pancake batter into the pan. Wait until bubbles show up on the surface, then gently flip over and cook for another minute or so.
