This sweet potato bread was my ultimate comfort food these past few rainy days! It makes me feel like Autumn has already arrived in my kitchen.
I love that you can take a simple food, like sweet potato, and create a healthy alternative that is not only super tasty but is nutrient dense and will nourish your body too.
Let’s talk sweet potatoes! What’s not to love about them? You can eat them like regular potatoes, but you can also use them in pancakes, breads and cakes too.
They can be the perfect replacement for pumpkin during the autumn days and are super healthy.
There is something deeply satisfying about making your own bread. My sweet potato bread never lasts more than a few days in our house, but I can’t seem to resist making it week after week. It’s an awesome gluten free, soy free, dairy free, and refined sugar free bread that is great for breakfast, snacking, or desert.
Slice up thick slices to enjoy with a cup of coffee at breakfast, eat it on it’s own, or top it with peanut butter.
Sweet Potato Bread
- 1 medium sized sweet potato mashed
- 1 mashed banana
- 2 eggs
- 2 tbsp maple syrup
- 1 tsp vanila extract
- 2 tbsp almond milk
- 1/4 cup of almond butter
- 2 tbsp coconut oil
- 1 tsp baking powder
- 1 teaspoon baking soda
- 1 ½ cup of almond flour
- sprinkle of cinnamon and nutmeg
- Mash sweet potato and banana together
- Add liquid ingredients
- Mix dry ingredients together and then mix into liquid ingredients
- Bake for 40 mins at 350F/175C
